Blenheim Forge in Peckham are offering a knife sharpening course. I'm probably going to go in the new year, as so far my efforts with a sharpening stone have made my knives more blunt.

I'm hoping to get a Victorinox SAK from Father Christmas, just a mid sized one for EDC.
Will use the little blade for sharpening pencils, what's the best way of resharpening it / keeping it keen?

One of these used with a bit of care: https://www.victorinox.com/uk/en/Products/Swiss-Army-Knives/Accessories/Dual-Knife-Sharpener/p/4.3323 is more than good enough for keeping a SAK sharp. Works a treat on kitchen knives and other blades too.

As Christmas is approaching I wanted to gift my parents a kitchen knife, preferably a carbon steel Santoku.
I was thinking one in the range of 70€. Is there a go-to knife or are all knives at that price point more or less the same quality? -
