    All the pork shoulders are now in the smoker

    4 lamb shoulders are on too

    Next will be the final lamb shoulder and starting the beef ribs

    My poxy little short ribs will be going in the oven overnight in a couple of hours, just bringing them back up to room temp now... I have no idea what the father-in-law is doing with his brisket and ribs, I'm sure he's gonna do his usual thing and chuck them in the smoker an hour before it's time to eat... Tsk...

    Enjoy your bbq too. Smoke the ribs and then transfer to the oven - its what a lot of competition smokers do these days.

    I'm gonna oven first and smoke later, I know it's better to do it the other way around but, fortunately, I'm playing to a home crowd and they already love them this way...

    Lori's cousin keeps banging on about a beef rib sandwich I made him six months ago, he says it's the best thing he's ever eaten... He promptly went out and bought a smoker the following week...

    I think he's crazy, they're not THAT good...

  • Can't live up to what Dj is doing today, but after an afternoon of burning dry garden cuttings in the trusty chimonea base, I slung my heavy steel grate over the embers and whacked on a hunk of bavette I'd been marinating in rosemary, garlic, a little red wine vinegar and olive oil. Decent cut, needs to be well rested and carved against the grain, up there with onglet or rib eye.

  • @dancing james Do you have a preference between your WSM and the GMG? Do you prefer the flavour you get from one over the other (or is that very much dependant on the wood being used)? Is one of them your 'go to' and the other a backup or is it very situational.

    I've got a Webber kettle that I've setup for two zone cooking but I want to dedicate that for grilling and get a dedicated device for smoking. So interested in hearing real world comparison from someone with a pellet smoker and a charcoal/wood smoker.

  • I like both

    GMG is easier to use, and produces a more subtle smoked flavour.

    Charcoal smoking in the wsm can give a more acrid smoke flavour if too much wood is used.

    If you have the kettle there is an advantage that the wsm uses the same heat source. But the GMG is quicker to get up to speed and has the electronic temp control, food probe and the food cooking profiles.

    To buy a PID for the WSM costs a few extra quid which puts the price to a similar region as a GMG

    Sounds like I've got a bit of research to do in PIDs. I like charcoal smoking but I've found there can be a lot of babysitting throughout the process (might just be my kettle) and anything that cuts that down in the early hours of the morning is a good thing.

  • Unlikely - there'll still be blokes stood around it saying helpful stuff like "good fire" and "I know a couple of people who have these..."

  • BBQ was great, father-in-law's brisket came out pretty good despite the fact that he only cooked it for about five hours, could've gone very wrong indeed... Beef ribs were wonderful... The outlaws wound up inviting some of the neighbours, they loved it...

    I wonder when I'll next be able to poo... 🚫💩
