I'm on the lookout for some cheap Time Allroad Gripper pedals so I can have the best of both worlds.
I would not use those, they're more awkward than you'd think, the grip area is quite small, and for a bicycle that'll be used for town used et all, it will get pretty annoying having to flip the pedals round to get the right side for the right shoes, the flat side isn't very grippy depending on the shoes you're wearing.
It sound great in theory, but doesn't work quite as well in practice, even when I did a fast tour where you're less likely to unclip every five minutes, it's still a trifle annoying.
I'd go for massive platform pedals like the one you've posted, it also go by the name Nuke Proof Electron pedals in Europe;
The yellow would defintely make the bike look very HHSP.

I'm not 100% sold on just having a flat pedal. I really like having clipless to commute in.
The other thing I could do is find a cleat that will work on Sidi road shoes that is (kind of) walkable and find some platform / clipless pedals.
But for now I'll just swap pedals.

New bell and some cheap MTB pedals. I got a voucher for a bike shop that I don't usually go to (and don't actually have that much in parts) and had trouble spending the money.

Picking up some new bars for this tonight. Very similar to these in shape (in fact, probably are these with out the VO on them). The risers have been good, but felt to narrow.

Installed them with some cut down CHAMPS grips (now HAMPS). Maiden voyage tomorrow.

another reason that i found those bars impractical for use with a front rack, long stem overhangs the rack meaning you cant but as bing things on it

Bars felt great this morning.
Kept the same length stem (100mm Nitto Pearl) and it works perefectly. The narrow risers made my arms go in and I was hunching my shoulders, the new bars felt a lot better.
I'll try and take a photo of the set up tonight.

Made this thing even more functional by managing to fit some Planet Bike clip on fenders. They're not perfect, but they'll do.
I have a front derailleur in the post. I'm not 100% sure if i'm just going to use it as a chain guide or a if I'll run a double crankset at the front.

Convert it to 650B with long reach Tektro brakes, and you'll have room for bigger tyres and mudguard.

So... I'd have to buy a wheelset, tyres, tubes, cassette, mudguards and new brakes? And then I'd have to dick around and hope that I can get enough tyre clearance with the already oversized rear stays? I'd have to buy some p-clamps to put the new mudguard on as well, as this bike has no fender eyelets.
Or, I could leave the Mavic wheelset I have on there (running 700 x 25's Schwalbe Durano Plus) with pretty much new Campy Veloce brakes and the Planet Bike clip-on fenders and spend absolutely no money.

Just bought one of these... and then read comments online stating that it won't work with my Shimano rear derailleur, so I'll have to buy a matching SRAM x3 rear derailleur. FML.
