I asked the same question too;
According to the thread over on weightweenies where the photos were posted, Fignon switched bikes mid-stage as cantilevers were lighter.
I hope he only did it at the foot of the final descent, I'd not fancy descending an Alp with just a pair of cantis to stop me!

Ah thanks, I missed that...
Like you I would imagine cantis are more poverfull (don't know about weight though). Very first MTBs had calipers then cantis, I always assumed they were more powerfull.
