2 fucking K!!! That's utterly bonkers. Wouldn't have believed your premium would have gone up that much. I've only just got my license and I was quoted around £550 for a 900cc monster. Mind you, the compulsory excess was mental high. That was with MCE to boot.

2009 Honda CBF125 in silver.
mileage is 25,000 (off the top of my head) I did about 4000 in 6 months before getting full licence and a big bike.
Needs new fairing (currently gsffer tape keeps it in place)
Needs indicators on LH side changing (have those just not done it)
Sat unused and unloved for the last 18 months
Needs an oil change and an MOT.Would need a van or trailer to collect it from Basildon, Essex.
Working examples seem to be in the £1000+ range, so half that?

Insurance in London has gone mad. I live just off Old Street, but fortunately I have a pretty safe & secure underground garage. Each year my insurers try to inflate the price, and I have to phone around and tell them what quotes I've got from where, just to bring the cost back to a decent level, and that's despite me having 10 years NCB (protected). To them I must be a model customer because all I do is give them money to insure a Honda Fireblade (CBR900RRN) and a Kawasaki ZX12R (A2) on a single policy. I've had both of these here at the same address for the last 10 years and never made a claim, and miraculously I've never had any points on my license.
This year I had to do the same old phone around, as they had added about another £150 to my renewal price. One of the insurers I called was Bennetts who I thought would be reasonable ... they gave me a price for my Blade, but were adamant that they simply wouldn't insure the 12R at all because of my address. I ended up with a fully comp policy back where I started with Carole Nash for both bikes @ £272 ... but the whole process and the way the pricing works is just crazy IMO.

Does the £2000 quote include commuting? I don't have a fixed place of work so never had it added to insurance but I'm always concerned that social, domestic and pleasure doesn't quite cover the full extent of my activities.
Just seems to me that daily commuting in all weathers + the parking away from home must increase the chance of a claim.

I pay about £400 (fully comp) with MCE for 10k annual miles with commuting on my Tansalp
Living in Essex has its perks.
Have you looked for a lockup?
That was my mate's solution after his bike was nicked.
