I can't bake, yet, so I'm afraid not. It's on the list of things to do in the foreseeable future. I'm sure I have loads of recipes in various cookbooks, but I've never tried them and wouldn't be able to tell you which one is any good. Nhatt might know, she's a good baker.

Can anyone recommend a good vegan cookbook? The one I have is a bit fidly i.e. 'making three things before you can make this one' sort of thing.
Does anyone get on with a particular straightforward one?

The best introductory cookbook that I've seen is "Die vegane Küche" by Ingrid Newkirk, but I've only seen that in German. The edition doesn't say what the original English version was called, unfortunately. It could be 'The Compassionate Cook', which is apparently a classic, but I don't have it. The recipes are simple and easy but very effective and transformed my mother from a reluctant into an enthusiastic vegan cook (she's vegetarian herself). (I also recently saw quite a good book by a German cook called Attila Hildmann which wasted no time in including vegan versions of several tricky-to-make-vegan German staples such as the ur-German Döner Kebap.) Sorry, probably not much help unless you read German.
The Linda Majzlik series is very simple and straightforward, although there are a lot of books to buy! I also really like 'Vegan Deli' by Joanne Stepaniak, but it's a bit specialised. I'd avoid the old warhorses like 'Eva Batt's Vegan Cooking', which is totally basic.
I generally cook from a mixture of all cookbooks, even Robert Carrier's extremely animal product-heavy doorstop 'The Robert Carrier Cookbook'. It's useful in that you learn lots of techniques of how to veganise things. I generally find it extremely easy to veganise vegetarian recipes. My favourites are the first two RASA cookbooks by Das Sreedharan, as I've probably mentioned about a dozen times in this thread already.

Japanese friend of mine told me I should try crumbing seitan.
I did, adding strong soy sauce to the coating.

Just getting to grips with vegan baking and learning how to amend existing recipes. However I'm allergic to soy, nuts and seeds! Anyone got any recipes they'd like to trade? I make a mean chocolate and raspberry crumble loaf!

This is so damn good that frankly I've given up trying to make cakes/ cupcakes any other way.
Also- you can make an amazing banana and carrot loaf by using more carrots than you'd expect and replacing the egg for bananas (mushed up and add a teaspoon of water). It comes out with an interesting consistency, but since you don't really have to add any sugar, its ludicrously healthy.

That recipe contains soya drink, Henry, which as a derivative of soy leggyblonde may be allergic to? I suppose you can always substitute rice drink.

In the icing.
Which is optional.
And can be made with veggie marg. etc etc etc.That cake recipe is actually one of the best, and easiest to repeat/ change- you can swap the cocoa for literally anything.
Much of the vegan cupcake book is based upon the principal of the baking soda/ vinegar reaction (we have the book- well worth the buy). -

Absolutely, the vinegar thing is just about the best simple trick.
It worked out really well. I thought I took a photo with my phone but maybe not. I'd use twice as much biscuit base next time though, one pack of hob nobs didnt make enough for a 10" torte. It was too slim in places. I also made the mistake of tasting the chocolate mix before I'd chilled it and it was a bit foul.
Very rich and sweet... definitely something to make for special occasions only!
I think it may have been the first cake-type thing I have ever made, was quite pleased that it worked out in the end.
