I don't get the obsession with eating what are effectively meat/cheese/egg/milk substitutes. After about a month of not eating any meat/cheese/egg/milk about 3 years ago I deliberately didn't buy any of them. I managed to make some pretty great food for over a year without resorting to any substitute products.
Disclaimer: Now eating meat/cheese/egg/milk regularly.
EDIT: I suppose if your cooking skills aren't up to much then it can be a bit of a challenge.

Rob, I appreciate how it could assist. There are significant practical difficulties. Some arise from eating in and around work. Eating is a necessary part of what I do. Complicated diets make life very difficult. In addition, being vegan would probably lead to me being divorced.

Well, that's also in the plan, although wearing cycling shorts/tights without a chamois pad is very silly and you shouldn't expect that you will achieve this as part of the training.
