Vegan carrot/banana muffin recipe:
Take bananas- let them go over ripe.
Mash- these are your 'eggs'
Add sugar, baking soda, flour, tonnes of grated carrots and a splish of water, till appropriately muffiny batter texture occurs- gooey, but not pancake, almost @ sticky dough stage....bake for 23 mins till muffiny @ 190 ish.

Tasty Vegan brekkie/lunch/Dinner/snack
Soft Tofu, Rice(pre cooked and cold), green brocolli-ey veg (ideally Chinese broc) or whatever you have that you love, Mushrooms (lots!), Spice to taste.Stir fry all ingredients till nicely softened. drain all water and reserve.
Add tofu so it forms an 'omlette'. Put all veg and rice in middle and fold.

Gypsy Soup:
Ingredients:
Yams (sweet potato)-one massive or two medium
Big Red/ Brown onion
Veg stock (strong as possible)
Chick Peas
Cumin
Chillis/ Chilli paste/ whatever
Black Pepper
Can chopped tomatoes.
Celery
(emergency flour)
salt, pepper etc.
2x Red Peppers (sweet)Cook onions chilis celery till softened in Olive Oil, then add Sweet Potato and season to taste ( I like a lot of cumin- 2 tsp), add veg stock (about 500ml)
Cook for 10-15 mins, till Yam is softened.
Add Tomatos, Chickpeas and Red peppers and simmer till soupy and gorgeous.this is my favorite soup. it really lifts you on a cold day and is cheap as hell

can we have some more accurate amounts please, sounds good
3 to 4 large carrots- grated- some fine, some not so fine
2/3- 1 cup of mashed banana- I tend to use more not less
1/2 cup sugar
1 cup Flour
1tsp baking sodaMake sure you have some water and some flour at hand to make the batter appropriately viscous- look online for a guide if you've never made them.
You can also chuck in some vanilla essence( a dash) and some cinnamon (1 tsp) to make it even better, and some nuts (walnuts crumbled) or some pineapple to make it more enticing....Its a very good basal recipe and IMHO- the bananas make the resultant muffins a million times tastier than the non vegan equivalent...
It's lovely- also- check muffins @ 15 and 20 mins, as it can cook super fast!!!!
this makes around 8-10 muffins.
also as I adapted the recipe (from a friends carrot cake recipe)- I had to make it up a bit so apologies for the inaccuracy that will come with it- its well worth experimenting till you get a decent batter for a while, as the first few attempts may yield a not so great muffin.

Bobbinbird, the hazelnut and almond milk is teh sex. It's mostly rice milk but the nuts make it that much creamier. Also bonsoy is great for soy milk.

So where do you buy this hazelnut and almond milk, it sounds great.

I don't tend to digest dairy well so don't drink milk but off the back of this thread last night I picked up some so good oat milk and it's pretty good (it tastes like the milk you get in the bottom of your bowl after you've finished your cereal unsurprisingly enough) so think I'll try a couple more the hazelnut and almond one sounds awesome though.

Can any of you vegan chaps let me know if nut milks are any good please? I'm having to stop eating dairy products and also soy products for health reasons, so soy milk is out.
Try 'Oatly' oat milk, really nice! Never really been a fan of soy stuff, bar the chocolate flavour alpro!

Also, substitute that cheezely business with some proper bottom shelf cheddar and I'd destroy those beans on toast.
