Question 1:
What are the things called that turn gear lever braze ons on the downtube into gear cable guides for bar end shifters (not specifically bar end shifters but they are what I am going to be using)??????
Question 2:
Do these exist or have I made them up?
Question 3: If this lever2guide converter exists what is it called and where can I get some?

If I buy bar end shifters then they are probably gonna come with lever2guide™ converters maybe?
Also, it shouldnt be a problem if I use, for example, an 8 speed bar end shifter with my 6 speed cassette right?

That should be fine, you'll just have to make sure you have the derailler limit screws set correctly to stop the chain coming off. Probably best to have the "spare" gears at the bottom end of the cassette so you aren't trying to pull more cable through then you're in the easiest gear, as this *could *lead to the cable stretching more.
That's probably bollocks but that's how I'd do it.

i had a Kalloy Uno stem that looked exactly like that in 1998. It was crap, the steerer bolt bit kept slipping.

Bar clamp looks like the lowest quality Kalloy product, but the steerer clamp seems to have been copied from Syncros. The seatpost too is probably a Taiwenese OEM product made by somebody who had seen the Syncros catalogue.

That's probably bollocks but that's how I'd do it.
I'm afraid i'd disagree with you.
Having the 'spare' gears at the bottom end of the cassette will mean that the shifter can easily be put into a position that will slacken the cable which could then come out of a guide or catch on something.
Put them at the top and the cable will never go slack and you'd have to be a ham fisted idiot to wrench on the lever enough to stretch the cable.
Lots of shifter can over shift at the top end anyway so your set up will be no different to this. -

Seatpost is a Control Tech road post. I have one the same but was silver, now anodised black.
Stem, no idea but looks cheap.
I shall take greater care when posting in future.
