I did google it. you're going to feel really bad now; by a bizarre coincidence it was dad doing a 'dutch oven' that killed her. I'd just never heard it described that way. Weird eh?

Some people enjoy cooking and enjoy using a quality, well made tool to get the job done.
You know, a bit like some of the people on this forum who enjoy riding a quality bicycle that feels good to ride and does its job for a long time.
Liking a knife is no less credible than liking a bike.
Arrospok will not make your average cyclist perceptibly faster.
Sharp, expensive knife will not make home-cooked food taste better.

As far as I can tell the excess weight of an arrospok would just make it less enjoyable to ride, the majority of people with arrospoks have them because they think they look good. (All imo of course)

Yep completely agree, i'm sure you can get some great knifes for relatively cheap, I was just making a comparison between the two things in your post.
In conclusion i'd rather have a good, sharp knife than an arrospok.

Bumpity bump!
Anyone have any suggestions for a good filleting knife? I have just spent a fruitless couple of hours or so, increasingly wanting to throw the blunt as fuck, or just slightly sharper serrated knives that the airbnb apartment I'm renting down in Spain has mutilating fish as I've tried to fillet them, that has reminded me I need one for my own home for when I next go to billingsgate and buy copious amounts of seafood.
Suggestions? Should I just go and buy a sabatier?
Any reasonable advice appreciated? -

Try a fishing tackle shop or failing that google angler's filleting knife and you'll see a nice range. Sea fishing tackle shops could be better as few coarse anglers would fillet a fish under normal circs.

Have a Kyocera ceramic knife which is great except when it needs a sharpen. Anyone know of anywhere that could sharpen it in London?

Like doing things like tinkering with bikes and sharpening knives. Naturally came across a few knife makers on instagram, one of which has a small workshop in the old cutlery works in Sheffield. Went to see him today, looked at a few samples he had floating around in the workshop and ordered 2, with a few adjustments to suit me, for bargain price.

Send it to Whitby & Co (UK), they handle the guarantee in Britain.
I sent an 'original' Leatherman to them as some of the tools had snapped. They couldn't repair as the model wasn't made anymore and sent me a Supertool 300 free of charge as a replacement.

chaps i need some advice on knife sharpening. i have had a wusthof classic chef's knife for 4 years and maintained it with a wusthof pull-through sharpener. it did the trick and kept it pretty sharp
a few months ago i noticed a couple of small chips in the blade (probably my other half chopping through chicken bones grrr) so i took it to a guy round the corner who sharpens knives.... he did an AMAZING job - the knife was insanely sharp. sharpest it has ever been probably. goes through tomatoes like butter
a month or so passes and the knife has dulled a tad. i use the pull-through sharpener and it brings it back to life a bit but nowhere near the level it was after jiaxi fixed it
so what gives? i truly believe that a safe knife is a sharp knife and cooking is basically not doable with a crap knife (note: i always take my knife with me if staying in airbnbs in the UK). do i need to get a set of whetstones? throw the pull-through in the bin? get a sharpening steel? i am all ears and would love to hear some proper advice on routines, methods etc.
i've tried to learn about this on youtube but the advice is so contradictory between accounts etc... lots of people trying to shill their own products

I got the ceramic Global pull through for my mum and brother. It gets knives very sharp and is very easy to use. Add water and pull through a few times. Use the coarser wheels to take out any chips.
I wouldn’t use a fancy knife on it as it won’t get it as sharp as a stone and creates a greater bevel.
But, for convenience for someone who can’t be arsed with stones, it’s fantastic and infinitely better than any other pull through.

I've got a aliexpress knock off of the lansky knife sharpener and am pretty happy with it.
I use a steel regularly, then sharpen properly once in a while with my lansky clone.
I don't normally subscribe to the standard response in the knife porn thread of learning how to perfect sharpening on a stone as life is too short. But it sounds like you're on a mission so I'd say do a course and buy some stones based on the course recommendation.

Do you have a bench grinder? If so you can make two mdf wheels and sharpen knives to razor sharp in seconds. Family members send me worn out knives and I return them back stupidly sharp.
