Read about the no lasers with disc brakes thing. Seems odd to me as people have been building mtb wheels with DT Revs for years. Maybe Sapim were basing the warning on a wide range of use cases and conditions. i.e to stop someone building a downhill wheel with lasers. Not a road disc brake wheel.

None of this makes sense. Gravel bike for road, for starters. Also, it has wheels? What sort of wheels? I presume you've swapped gravel tyres for road tyres already? That would make a massive difference. Also bike weight is almost a non-issue unless she's lugging it up stairs or for some reason racing up mountains on the wrong kind of bike. How much do the current wheels weigh and have you plugged both values into analyticcycling site to see time difference up a hill? You might be surprised.
Also, you said winter build, so why not just throw slicks on the gravel wheels. Unless you're not in the UK and actually have nice roads? -

Gravel bike for both gravel and winter (mudguarded) road duties. 2 wheelsets to live the 1 bike (plus a race bike) dream :p So leaving the current wheelset with gravel tyres.
Are you saying they need to be aero then?

In most cases aerodynamics trumps weight, for sure.
A further point is that for winter bike use you want cheap and durable wheels not so much fast wheels (unless you're racing in winter then you'd still want the aero wheels for pretty much everything except hill climbs).
I mean, you could use lightweight or aero wheels during winter, sure, but then you're using nice wheels in shit weather which kind of defeats the point of a winter wheelset.

The error was moving over to allow someone past and then riding over broken glass in the process. I did pull a staple out of the tyre at the same time so it could've been that but unlikely given the glass-bang timing.

I was planning to build up a set of disc brake wheels, but the price of these cant be ignored vs the effort/cost of a wheel build.
