Go to any decent LBS (one that doesn't turn you away) and ask if they have any Shimano quick release lying around.
TBH, the budget and higher end Shimano QR perform the same, only the DA is the nicest and lightest of all.

The older DA 7700 are almost always silver, and quite easy to find second hand. Great hubs, spin up well, probably the best cup and cone hub ever made.

Apologies if silly Q, but are deep-section (30-50mm or so) carbon wheels generally more likely to stay in true than standard Open Pro built wheels? Are they any stronger I guess is what I'm asking? Less spokes but deeper rim. Or would a well-built 36 spoke Open Pro be the best option for reasonably fast and durable?

If you still think rim weight is that important, you're definitely not living in 2015. It doesn't take much of a gain on either aero or rolling resistance to wipe out any disadvantage from adding 100g per rim.

What would be instead please? Possibly going 11-speed and might need new wheels so considering options. Also, I'm heavy, so they need to be tough, but not touring wheels. Would be for a CAAD10 or something similar.
Maybe a better question would be: Are wheels built with aluminium rims and 32 or 36 spokes going to be tougher than something like a C35 or 303? I want as fit-and-forget (as possible) fast wheels which can withstand some weight.

That's not heavy :-) My RS80-C24s are still in great shape after plenty of unpaved roads under my 100kg weight, so I don't think you need to worry too much.
For a low budget, DT R24 or Fulcrum Racing 5LG would be good options. There's nothing wrong with something like Kinlin XC279/DT R460/H+Son Archetype 32-spoke laced to Shimano 5800 or 6800/Ambrosio Zenith/Novatec hubs if you want, but there's not really any need for heavy duty wheels on a road bike unless you're either properly heavy or you're going way off the beaten track.

DT R24 for under £150 inc. shipping. FWIW, I chose the R24 over the Racing5LG because I thought the DT wheels were probably more suited to my avoirdupois.

Hope says no:
All Mono Pro 3 and earlier hubs and wheels using these hubs are not compatible with 11 speed Shimano and the 11 speed cassette body cannot be fitted
You could just buy 11-speed Hope Mono RS. I'm not convinced that a £200 pair of hubs is much of a bargain in the face of £150 complete factory wheels for a road bike.

After reading some Wiggle reviews and questions, the Zondas do sound good. Decent discount on there and seem to be able to handle 100kg fine. Others about 100 or 150g lighter seem to go from about the Zonda's £250 to about £600+

Type depends on the width of the holes drilled, rather than the rim.
Justridingalong can post you some.
The planet x ti tarty qrs haven't killed me yet but on every other bike I own it's shimano closed cam.
