It's only a guess, but it looks as though the dial area may be split into three sections. There's a pointer on the inner section. See that? You may be able to drive the position of this with one of the crowns. Possibly the same goes for the outer chapter ring.
I would have thought a manual would exist.

Alsal Watches on Strand. Junghans have put their prices up a bit but Alsal still have a couple in stock that they are selling at the old price.
Reading between the lines (and I could well be wrong), I think Junghans are having to pay more to ETA for movements.
