5700 is so good it's really difficult to find reasons (other than vanity) to guy anything else.

Update on Force 22:
The front shift is amazing compared to how it used to be, the lever throw is too long but it's rub free in every gear, quiet as a mouse and not dropped a chain yet.

Will my DA7800 hubs take 11sp in any way?

Almost certainly not. FH-7800 was the short-lived aluminium 10-speed only rotor which Shimano dumped in favour of the Ti rotor FH-7850 with normal depth splines. The connection from rotor to hubshell is completely different on the 7800 compared with 7850, 7900 and 9000. Although it's not officially supported, I'd be surprised if the 9000 rotor didn't fit the 7850 hub shell, but 7800? No way.

You could file down the freehub body which is what Lennard Zinn did to some factory Shimanos.
