Cooking up some french onion soup topped with St John bread and Comté, followed by home made apple pie with Bramleys from a work colleague's garden/my flatmate's folk's farm, topped with unpasteurised Guernsey cream... Fucking yum!

Anything with beef shin is pure win. Once had an amazing beef shin ragu on top of pappardelle at Trullo.

I braised 1kg of oxtail in brandy, port, walnuts and raisins, I gave it 5 hours. the mirepoix cooked down to a paste bones came out clean. it stuck to your fingers... insanely rich!
less than £6 for the meat and had more flavour than the shin. but to heavy for pasta. it is ideal for stuffing cabbage leaves or pies -

today is all about the eccles cakes. i have found the most amazing raisins and golden raisins - big as babys thumbs and twice as juicy. plenty left over after the christmas pudding marathon and with the left over puff pastry i made for the beef above its all fallen nicely into place.
i couldn't find any mixed peel so made my own using orange and grapefruit, soaked the fruit in earl grey. should be ready tomorrow -

Why are the Borough Market Trustees such a massive bunch of short-sighted douches?
There has been significant change within the trust recently, so I expect things to improve. Several traders that were asked to leave have returned in the last few weeks.
Tony left of his own accord, I believe. He has plenty of loyal customers who don't mind the extra mile (or even a mile less) to see him, as well as a bulk of his sales being wholesale, I think.
The area around Maltby St is very exciting at the moment, with lots of producers/maturers basing themselves there with more freedom over how they operate.

Gonna make some guiness and shin of beef stew in the next couple of days, probably monday, and then will embark on the epic 40 cloves of garlic roast chicken midweek.

Unless you add roasted tomatoes, celeriac, Fennel... something other than root veg then its nothing but a war time famine ration
I also made soup tonight.
Split pea, lentil, sweet potato and some other pulses.
full of just spicy enough to let you know it was there win.
(along the lines of gypsy soup- still the best winter soup there is).
oh and a bacon/rocket salad of goodness.
