  • Away from the meat festival....does anyone know where I can find Kirby cucumbers in Nodnol? It's a variety used for pickles.

  • Impatiently waiting for the next 2hrs for my bag of chicken to finish marinating. Grrr

    4 large chicken breasts
    1tbsp Garlic paste
    1tsp dried chilli flakes
    50g pickled red jalapeno slices
    1tbsp of tomato paste
    Black pepper
    Rosemary
    50ml Water

    (Fried on low heat)

    Served up with a lightly salted cubed courgette and yellow pepper slices (oven 25-30mins) and chips.

    Sunday lunch WIN! :D

  • Waiting impatiently for me mam to get back from walking the dog, so we can eat. She persuaded me it would be nicer eat at home than go out, and she is taking far too long!

    Slow roast pork, cabbage, culcannon etc etc/

  • poached are an enigma.

    Poached are the best.
    Also, 'warm' eggs... boil an egg for only about 3/4 minutes.

    Poached:

    • wide saucer pan with boiling water
    • tbs white vinegar
    • teasp salt

    Let the water with vinegar and salt come to a boil (simmering), stir the water gently and chuck the egg inside,
    carefull not to puncture the yolk. The vinegar will prevent the egg from spreading out, the stirring the water will
    force the egg white to keep around the yolk. Can't go wrong with this, too easy.

  • Spanking fresh eggs are a must always, poached included.

    Stale egg whites don't coagulate around the yolk easily. Fresh do. Fry a fresh egg and watch as the white immediately firms up; fry an old one and watch the white run and whither away.

    Gordon Ramsay used to use the 'fried egg' test for new chefs coming in. He'd ask them to simply fry an egg. You can tell a lot by how someone fries an egg.

    ^ those peppers sound interesting. Just shallow fried?

    Cut the rings as straight/cleanly as possible, about 1cm thick each. Get a splash of decent olive-oil (garlic infused is pretty awesome too) an equal splash of water and a generous pinch of sea-salt. Get the pan sizzling and whack them in.
    Once the little bit of water has cooked off (and cooked the rings through) turn the heat up to full blast for 30 seconds to lightly caramelise.

    Et viola - tasty food and a slightly smokey kitchen ;)

    I've had putrified shark, to be taken with a shot of some weird liquor. Rank as FFuuuuu.
    Probably one of the worst taste experiences of my entire life.
    And to think in Iceland they call it lish.

  • Modestly I'd say these were a triumph. Made them last night. Fish balls - haddock, mash, garlic, chilli, lemongrass, chives and parsley. Heavy on the fish and seasoning. Through flour, egg then I used panko breadcrumbs for the first time to coat. No comparison in terms of crunch. Would use again. Then deep-fried, served with yoghurt and lemon sauce, plus peas.

    remember when Lidl started selling reindeer meat? no me either.
