Basically a vinegared fruit syrup. Sounds a little weird, but tastes great. Very on trend in cocktails at the moment. Basically just macerate the fruit with sugar overnight then add vinegar to the resulting syrup.

FOR MY SINS I went back to Bird for a greasy fried chicken and waffle sandwich, only managed half, felt instantly sick, sweating profusely all the way home, bleugh. Got a hefty Ginger Pig beef and ale pie for dinner. Reasonable price considering its size.
Plan on serving it on a plate to myself, cutting it in half and eating both portions then praising my decision making.

Recipe ideas please. I picked up a slab of short ribs without thinking about what I'm gong to do with them.

Whack them in the oven at 110C on a rack over some water in a roasting tray sealed super tight with foil to stop any evaporation for 4 hours then remove, put up oven to 200c and douse in BBQ sauce of your choice for 20 minutes with foil off or so to get a crust then add more sauce.

Bang! This is what was holding me back - I was about to give up and freeze the lot, for want of a large enough cast iron casserole. Thanks for the pointers!I went with an old bottle of wine, carrots, orange, chipotle, black cardamom, bay, shallots and young garlic.
Basically, bits that I had hanging around.
[Edit] It's on at about 80 for the next 12 hours.
