  • Just finished this salted caramel chocolate birthday cake for hatmissus' birthday party tomorrow.

    It's basically a cake shaped lump of butter, sugar and cream. 1000kcal 57g fat a slice*, serves 12.

    *plus whatever the champagne truffles on top are

    bacon? and why white onion, if i was going to eat onion raw, it would be red, tastes way better! i would definitely go for a beef tomato.

  • The onion debate is a good one. I have wrestled with it. I agree, I love the red onion.
    I decided white due to the mass appeal factor. I might have to workshop it, blind taste tests.

    Bacon, yeah, I think I will bacon it up. Smoked, streaky delicious bacon...

  • Spread on hot crusty toast and devour, with a lightly chilled glass of Muscat Beaumes de Venise. Chortle haughtily.

  • If it were me, here are some things I'd do.

    Crisp up bacon, crumble with some black truffle and add to the top of the bun instead of sesame seeds.
    Watch Heston Blumenthals programme on burgers
    Deep fry shallot rings.
    Salt/wash and dehydrate some vine tomatos, blitz and add to/spread on fresh tomato of your choice
    Using a closh when frying the patty seems to be a fairly well regarded trick

    Use a heavy skillet, add a little clarified butter and then season it like mad with S&P before placing the patty down. Keep the pan relatively dry and keep basting the meat with clarified butter. I also add a little fish sauce to my burger to raise the umamamamamamamamamami levels.

    closh is a given when it comes to melting cheese on to a patty!
    tomatos - gonna let my ketchup do the talking, but i do use vine tomatoes.
