Just finished this salted caramel chocolate birthday cake for hatmissus' birthday party tomorrow.
It's basically a cake shaped lump of butter, sugar and cream. 1000kcal 57g fat a slice*, serves 12.
*plus whatever the champagne truffles on top are

The onion debate is a good one. I have wrestled with it. I agree, I love the red onion.

If it were me, here are some things I'd do.
Crisp up bacon, crumble with some black truffle and add to the top of the bun instead of sesame seeds.
Watch Heston Blumenthals programme on burgers
Deep fry shallot rings.
Salt/wash and dehydrate some vine tomatos, blitz and add to/spread on fresh tomato of your choice
Using a closh when frying the patty seems to be a fairly well regarded trick -

Unfort, the audience is generic tasters, so should appeal to the masses, to win.Use a heavy skillet, add a little clarified butter and then season it like mad with S&P before placing the patty down. Keep the pan relatively dry and keep basting the meat with clarified butter. I also add a little fish sauce to my burger to raise the umamamamamamamamamami levels.

tomatos - gonna let my ketchup do the talking, but i do use vine tomatoes.
