On the topic of brake levers, If you like the shape of Sram levers in general, then buy a set of Apex/ Rival/Force, 2nd hand (ideally with broken shifting mechanism for cheap) and saw off the shift paddle, I ran a set of old force levers modded like that with TRP mini Vs for ages on my touring bike, and they worked well and were very comfy.

No need to destructively saw them down. You can simply dismantle them, which will save weight and then someone else could use the internals for repairs

Feeling like I could’ve gone way bigger on tyres. Looks like there’s miles of room in there considering what clearance was like on my old bike, I even put bigger tyres on than in that photo and then put guards on, lol. So either I’m a masochist when it comes to fitting guards and I’m fitting them far too tight or I could have run 40c easily.

Went for all black to match the bars and saddle. Usually a tan wall guy but think it’ll look right once the bars are wrapped.

They’re taken by my mate who’s building it up for me, I’ll pass on the advice, lol.
Also my mate said there was a little bit of play in the front wheel bearings, so bought some ridiculous Easton ceramics that were on sale.
