Well it gonna be jellybeans so white it must be.
It's tricky, I think fork jellybeans might be over-egging it. Most of the examples I've seen have black forks.

Also musing on the idea of just clearcoating or linseed oiling the rack, 'cause the fillets are so nice. Not sure how that would effect the longevity

I did. Not sure I'd want to make a definitive stement on the longevity of it as a finish though as I haven't been using the bars, they have been in my slightly damp garage though and don't seem to have developed any corrosion.
I guess a rack is going to be subjected to a lot of rubbing and wearing so a more solid coating may be advisable?

From a bit of a read up, as long as stuff is sandblasted or chemically stripped first a clear powdercoat is pretty good at preventing rust, but I think I'm veering towards black for the fork and rack anyhow
