I took the dirt drops off the mtb. I could not get the reach right, so I will have to build an off-road tourer I guess.
Anyways, this bike is a lot of fun with suspension and semi slicks.
I have an 34T on order and a new casette and chain to go on here.

Off the peg racks can't be done easily with out compromise. There is soo many fixing standards and weird fits that it would never be worth our time.
Surly, Nitto etc are only able to keep prices low due to shear size of fabrication.I can make you a custom rack if you fancy.
This one is made from fairly cheap ERW mild steel tubes.

How easy would it be to make a pizza rack that only mounts to handlebars and behind front brake? Can’t find one anywhere and the BLB looks crap

Well,
It would not be very strong. You need the triangulation to at least mid fork for it to be strong enough to make it worth while.
I am currently working on a roll support for bike packing using suspension forks. But it will have less carrying capability than your average pizza rack. -

Thanks. She wanted 28c so this is a compromise. She also refuses to use mudguards.
