Doneit. That Challenge Grifo is totally fucked btw - sidewall has split in a couple of places, where it meets the rim. I seem to recall something from Challenge about it being verboten to use their clinchers on carbon rims? Anyway, I won't be doing it again.

This is just from experiance. But the ubeless MTB tyres I've mounted seem to be tighter than the non tubeless Version. I dont think its a sideway issue. The lightest racing ralph has an insanely flimsey sidewall. But getting it out of the beadlock is actually pretty tough.

I've been on x-ones for all purpose use, good on dry and loose, clog up a bit in clay. Hold air well and mount easily.

Just mounted them - easy peasy, track pump only required. They've now got 60ml of Stans in each, so interested to see how they perform all round.
The Challenge Grifo's had rotted - presumably the Stans didn't agree with them.

I can't find the maximum pressure for the rim anywhere - it's an ENVE CX29er rim, currently at 70 psi (max for the tyre), and it has just gone "spang!", so somethings now in the right place.

The only one is Vittoria Corsa Speed. Be prepared to part with your wallet if you can find them in stock anywhere.

I run S-Ones in my gravel thing and they're fast and grippy, so I guess for a true road bike Pro Ones would feel even faster

are the rims tubeless compatible? if not then i'd not suggest you do this
ghetto tubeless works on mtb's but ghetto road tubeless is questionable due to the higher pressures

Just to be awkward I've got the opposite opinion, I've run tubeless on non-tubeless road rims a couple of times, including my current carbon race wheels wish Schwalbe One pro

schwalbe one's have worked well for me
if they are not mounting with one lap of tubeless tape, then wrap another layer on top

Apparently your tubeless tyres leaking oily goo is a thing.
The Hans Dampfs on my Stanton - that are about three years old and pretty shot to be honest - have starting doing this.
And I thought the oil was coming from a busted seal or crush washer on my forks...not sure whether relieved or concerned!

Schwalbe S-One is about as close as you'd get at the moment I think. There are not many options wider than 28mm before you get into proper file tread territory.
