I wouldn't use a Sprinter for general street riding. Also this thread is about tubeless, not tubular tyres so you may not get many helpful answers.

Any top tips out there for topping up sealant?
Don't really want to pop the bead off in case it takes half a day to get it resealed. Should I never in an injector? Any ghetto solutions?

Remove the valve core and use a high volume Syringe from boots or whatever
You might need to increase the size of the hole in the nozzle or the sealant will seal your syringe :)

Got a puncture, heard the hiss, tyre lost a lot of pressure but then seemed to stabilise.
Took a left hand turn - and felt tyre roll dramatically, stopped, looked - sealant coming out all round the bead.
I suspect the left hand turn broke the seal/pulled the bead away from the rim hook.
I assume that the stiffer sidewall on a designed-to-be-tubeless tyre would avoid this issue?

Finally got round to sorting the Compass Jon Bon tyres. Went up with a track pump, not covered in sealant, only drank one very large, strong beer... Let's see how they are in the morning...
