Well it's staying up without sealant so I got further than I thought I would with tubeless :)
Should I look for a sealant I can inject through the valve? Does this method mess up the valve cores at all? Or should I pull it down and pour some sealant in? Is there a better sealant if using this method?

Inject via the valve. Easier and won't cause any problems.

Take the valve core out, inject through the valve stem. Should be able to do it without a syringe- most sealant bottles have suitably shaped nozzles.
Pro tip - squish the tyre down - to expel air - then push the nozzle on then release the tyre and it will suck the sealant in to replace the air that came out.

Have the valve a little way off 6oclock so it drains away from valve or at 6?

I could imagine you partially removing it - loosening the valve core and then trying to inject sealant. Am just trying to second guess ways you could make this even more complicated.

I'm trying to make this tubeless shenanigans as easy as possible on myself to give them the fairest comparison so I want to try the best (vs. price) stuff I can find. If, after buying decent stuff, I still find it to be shit, I'll go back to tubes which will require that front wheel being sold or rebuilt. So, more ££ vs. less faff.

I run tubeless generally, but your stories have made me google and now I am convinced I will die a fiery death caused by my front tyre randomly leaving the rim
Good news is the tyre bead seems to have almost seated properly unlike all the tubed tyres I used.
Slightly worrying is the fact I can get it to bleed air just by squeezing the tyre.
