I am using DT shifters on my Raleigh for the same reason @jontea mentions. I might want to switch around bars and it's really easy if I just have to rewire brakes. I am running indexed Dura Ace DT shifters and they are so crisp. Shifting is absolutely on point and effortless. Damn simple and just works. I can understand if people don't like fiddling with friction though. I prefer the indexed shifters.

A chat with Winston has taken place, Winston Bike 2 is go.
Global supply chain fucked my rim choice, Pacenti, unfortunately, couldn't get the Brevet rims in my preferred size/spoke count, so plan b was actioned, thanks to @atk I now have a very shiny pair of Kinlin Xr31t rims, that will be built with a pair of Novatec hubs (the campy looking ones), should make for a solid set of wheels.
Other parts acquired so far:
Ritchey Venturemax Classic bars
TRP brake levers
Shimano 6700 front and rear derailleurs (need to make a shim for the front)
Panaracer Gravel King slicks 650b X 48, in black/brown flavour
Shimano 7900 downtube shifters, which @Oddo had off me, now they're coming home
And some other bits out of the shed.
Already thinking about colours for the frameset, Winston is using Aurum now for his powder coating, don't know what their range is like, but what I have in mind isn't 'out there' in any way, so should be ok. Currently, choices are between a mustardy yellow (see @Hulsroy little persons bike), black with silver sparkles or, robin egg blue (Surly Cross Check 2011, I think). -

I had the same problem with the Pacenti rims. I went the other way and got 28h rims instead of 32h because the were available. Had to get a new rear hub though. I still have the 32h silver hope rs4 hub in case that’s of any interest.

Ha, you are kidding, my dad sent me a card through the post, 1st class, took 2 weeks.
Local depot is woefully under staffed at the moment, but there's no rush, I'll give em til next Friday, if nowt turns up I'll give you a shout and you can make a claim, or at very least make a formal complaint. -

My choice was 28h, as I had Hopes in silver in the shed, but I've gone for 32h Novatecs, had them before, and they seem pretty good for the money.

Okay, sit down and listen here kids.
You like riding fixed? Dabbles with a lil single oh speed? Then downtube shifter is A Thing for you.
STI and all that fancy twee stuff are brilliant with ratios as tight as the Central in peak, however this inevitably mean you’ll get into the habit of changing gears all the times, maybe out of boredom, maybe want to experience what it like if you fiddle your cadence a bit, whatever float you.
The downtube shifter force you to stop changing your fucking gear all the times, you only need to pop down every once in a blue moon to changes gear, and with nominal ratio (I’m talking 2 teeth gap to 3, not straight block or Mount Fuji block), you get into a flexible cadence, just like your fixie skidder with too much brakes and mudguard.
Guess what? no big bill for you when you get it serviced with the chain barely showing wear.
You wanna relived pressure on your hand? reach down and have a fiddle, wanna slam from the 11t to the 28t faster than Dura Ace Di2 can do? You pull that shifter up to infinity, and beyond quicker than Buzz Lightyear can fly, you want to adjust the rubbing on the front shifter? Just gently coax it like you would your cap to the right angle that look good when piercing Mam Nick in February.
Put a good front chainset and you’ll end up not touching the small chainring, I’m talking 42/26, 44/28 or the partridge 46/30, none of those 50/34 bullshit that people wear out all the times because it look good going up Coldharbour, only for I to give them the Cold Shoulder when they ring it in for a service.
If you want the ultimate chainline on all ranges of gear? Get 10 speed shifter, take a 10 speed cassette and convert it to 7, with 13-28t and you’ll find it run smoother than an vintage '08 Clerkenwell Schooner with 48-19 and 23mm.
You can even get 11 speed by simply fitting the bar end shifter on the downtube with a downtube shim from another Shimano downtube shifters.
Wanna go faster downhill? well fuck luck to you.

Or go for 8 speed Shimano, it got a nice clunky feel telling you and all the people in front of you in a forum ride that you had, in fact, changes gear.

It is exciting, I'm just glad I've already done it once, and now know Winston gets where I'm coming from, and I totally trust him to make me a very fine bicycle from a few scraps of information and some pics of bikes I like, so that should mean less sleepless nights worrying about shit, well, apart from the colour.

Quick update, dropped rims and hubs off at lbs Saturday morning, got a call this afternoon, they're built already, excellent work.
Thursday is a day off for me, I'll be off to pick the wheels up, along with a couple of inner tubes and some rim tape, then back home to tape up and fit the tyres, then throw them in a box and ship em to SE13 so the big man can get to work.
Truly exciting now!
I do still have some Shimano 8spd ones, if they're of any use to @youramericanlover ?
