I cleaned both stem and bars anyway as I've cured a creak (on another bike) by doing this before. Also noticed the stem had a bit of metal protruding beside one of the threaded holes that takes a bolt from the faceplate, this looked like it has been rubbing the faceplate as there was shiny metal exposed on it do knocked that back with a file and abrasive paper.
So the grease may not have been what cured the creak.
Also, now my bars are quiet I noticed my cranks creak. Fuuuuu....

I've been told by a mechanic that copper slip is highly toxic (carcinogenic?) and is best avoided.
Think I'll stick to just grease.

Data sheet.

From reading that, I infer, that if you are a fish or if you eat it, it is bad, but otherwise it is fairly harmless.

If anything in Copaslip is going to hurt you from skin contact, it's the grease rather than the copper particulate. Don't eat it, and don't wash it off into the local stream with sulphuric acid, as that won't do the fish any good.

12oz cans from Boeshield direct are marginally cheaper per ounce if you buy two to get the free shipping.

I use a pot of Nimrod "seriously purple grease" that Condor sold me on pretty much every interface on the bike, except chain oil on the drivetrain. Nor stem / bars interface that I have never lubricated.
Any reason I should stop doing this?
Interesting about brake caliper frame bolts. I should get some locktite.

Which of these types of grease, if any, would be recommended for headset bearings?

Any of them will work fine, bicycles don't make high demands on grease and the headset is easily the least demanding part. I'd pick one of the ones with MoS2, but you'd be hard pressed to see any actual difference in performance even in wheel bearings.
Lubricating creaking parts attacks the symptom, not the disease. The creak will come back, and in the mean time the parts will have been wearing out where they are rubbing against one another.
