I've said it before, but I really loved this series of articles http://www.nerdfitness.com/blog/2013/02/28/strength-training-101/ when I was just starting out (not that long ago) it was what encouraged me to get started in the not-machine part of the gym. Be careful on that site though because I think they try and get you into the gluten free paleo cult.

Night 2 went in for 9pm got the power station all to myself for squats, ohp and deads.
40, 30, 70.Working on form, man I'm weak but I'm happy with the OHP seeing as I had a fractured scapular and suprascapular (the knee graze of motorcyle accidents) in March.

Yeah she wants to "tone" which despite my arguments to her is still believed to actually be a real thing.
I'm the same as you, i've got tree trunk legs and with good definition and decent calf size (hardest bit to grow) but my upper body never balanced, I've focused on heavier sets for everything above the waist and its brought me up to proportion

"tone" is totally a real thing. It is an easy shortening of "build muscle and lose fat". I think what gets people, and what a lot of people take advantage of, is that the process for doing this is different than they might think.
The only, or at least easiest, way to do that is to lift weights and correct diet, right? Cardio by itself can lose fat but it also loses muscle so you never get "toned" you just get skinny fat or skinny skinny depending on what you are eating.
I am of course talking as a weak person who was skinny fat then fat fat and is now just barely not skinny fat. But you know, stronger as time goes on and whatnot. After like 6 months and only lifting (Basic Strength squats/press/bench/dead/row), eating hellof protein, and no cardio I have shifted about 40 pounds and can see a couple of abs in there.
I am sort of riding again, but I think cardio is more for health/fitness but not really for body. It's ability to kill all of your epic gainz is overrated, however.

So quick question. Recently i have been doing a LOT of exercise from walking 10 miles a day to heavy weighs. I have taken my foot off the gas to give my body a little breathing space and give me time to do other things. One of the benefits ive found is that my body fat has dropped nicely.
Now my issue is my body is craving the same volume or more of food it had before while i was training hard and instead of being 'out in the field' im now lying on bed eating everything in sight.
Is there any way to bring my cravings in line. I know i dont need anywhere near as much as i did before. I am in good shape. So other than feeling like im constantly starving, what can i do? Or do i switch to limited food supply mode which will intensify my cravings?

Personally I find a ketogenic diet works best for me in these situations as the body stops craving the glucose / carbs and will instead crave protein and fats, both of which are difficult to eat a huge quantity of (for me at least), I also fast till lunchtime - this way i find i stay satiated with two massive meals each day, until lunch i drink Black coffee and Green tea (cold) and plenty of water
Failing this keep the diet the same and think about utilising fluids a bit better - keep water to 5l a day minimum and drink green / mint tea between meals to keep the stomach ticking over.

Do you eat because you are craving the taste or are you actually hungry? Are you drinking enough throughout the day?
Mint and liquorice tea is good for leaving a sweet taste in your mouth tricking you into thinking you've eaten something sugary which I find can help keep cravings at bay. Otherwise willpower!

Last night it was to have the feeling of being full... I was hungry hungry... (i think my body is thinking, fuck, hes going to make me walk/cycle/gym to excess so time to stock up)
I ate a tub of egg mayo / large thing of prawns / large packet of crisps / 4 yogurt nut bars / a beer / packet of salad and some BCAAs
And i stopped only cause i couldnt get any more in.
Then promptly fell asleep.
All that seems rather excessive.

It just kind of explains all of that in more detail with her as a case example. I feel like it does a pretty good and gentle job of dispelling some of those myths. @JWestland had a good idea re scales although I look at one all of the time for some reason.

When you say feeling full do you mean like after you've eaten a massive meal "I'm so full if I eat another chip I'll be sick", or just sated? If the former then you need to figure out why you crave that feeling and break the habit by just eating until you're sated for long enough that your brain learns that it doesn't need that stuffed feeling. Will take willpower though.

If she wants to bring up a bodypart, it's a bit of a different ballgame. As in, my legs have always been quick growers, so it's my upper body that needs more attention.
For some squats don't built the glutes (behind) as much as deadlifts.
I'd go for fun first, that stuff comes later once you know what you want. Any weights improves fitness.
As others said there's women fitness pages. They annoy me a bit (all this about resisting chocolate, feck off..) but there's lots of other women there so may work for her.
If she just wants to train with you for fun then any proper program works ^_^
