if you want to build a dingle speed, I have found this link useful as it calculates chain stay length together with gear inches so you can find the combinations that give you the gears you want with similar chain stay length.

Problems with SS gearing off road is that it can vary so much. Assuming a 42t front and a 700c, the appropriate gear could be anywhere from a 17t to a 22t, since you could be riding flat hardpack gravel or hilly and muddy crosscourse.
Thats why a 42/20 is often said to be a good medium.Then there is a matter of taste. Some like it spinny like Thuekr (I know him), others like it hard like Adam Craig at the SS US nationals riding 42/16 on a muddy and slow course.
So it depends on the purpose and your generel taste like Smallfury said.

For sure. Even on a given course GI is going to be down to personal preference. But thanks for the comments guys. At least I know I'm not barking up entirely the wrong tree.

42:20 is a decent place to start I would have thought.
Sometimes you have to walk up hills, sometimes you spin out on the way down. Having a blast single speeding the rest, more makes up for it though.

Thats for MTBs. Although those riding proper off-road stuff tend to go lower.
Depends what you're riding. I find hard 35mm wide tyres need more accuracy when riding, then 2.4" MTB tyres. So I dont go so fast.
Gi is a taste thing though.
