We've done 2 hilly ones on the bounce. WGC or the ill fated Potters Bar have some rolling sections.

you could take the 20 mins train to stevenage from kings cross then head out to codicote, kimpton, whitwell, preston etc and take in the hills and quiet roads there...

I'm keen to stick to a 'traditional' route this time as the last couple have been a little ad hoc for my liking. Looking to keep control as the front and be sure everyone gets a nice spin in. Including myself, for once

Not going to happen. When he left his Garmin with us last time we bunged it out the train window and gave him a pocket calculator back instead. He hasn't noticed yet and, in fact, get lost less frequently now.
