What do people use to lubricate the derailer and the jockey wheels - GT85 or similar, or something heavier?

I don't bother, just keep the derailleur & tensioner clean.

How is the tyre and mudguards clearance on that?

GT85 works fine if you apply it regularly and clean off the excess. Any build-up of crap on the derailleur will affect its performance.

Having both options lets them offer 2-speed, 3-speed and 6-speed, getting them a much wider potential market.
Lot of LFGSS Brompton owners on 2-speed Bromptons.

Yes, this converts it directly to an M type height, wider and more reach.
You will need M type cables.
You will need to trim the bars a little unless you have a rack / bigger easy wheels.

Seen quite a few hence I'll not entertain request to tighten the bolt (depending on how much thread is already showing) and ask that they book in for a sleeve replacement.
