  • Damn, that cake looks sooooo gooood

  • I modified the Ms Cupcake bakewell cupcake recipe to make a big cake, will plonk it up when I get home tonight and have the book in front of me.

    This weekend I will be modifying the peanut butter and jam cookie sandwich recipe to make a hazelnut butter nutella-esque version.

  • Ingredients for cake - this makes one layer so double or triple for 2 or 3 layers

    200ml almond milk
    20ml cider vinegar
    180g self raising flour
    20g ground almonds
    200g caster sugar
    1/4 tsp salt
    1/4 tsp bicarbonate
    1/4 tsp baking powder
    80ml rapeseed oil
    1 tbsp vanilla extract
    1 tsp almond extract

    If using a gluten free flour add 1/2 tsp of xanthum gum

    Preheat oven to 180/350/gas 4 and line your cake tin

    Mix the almond milk and vinegar together and leave for 10 mins

    In a large bowl mix the flour, almonds, sugar, salt, bicarbonate and baking powder together by hand. Add the milk and vinegar mix, oil and the extracts.

    Using a metal spoon quickly mix together for about 10 seconds until it is just combined and still a little lumpy (do not over mix)

    Tap the bowl on the work surface to stop the raising agents working too quickly and spoon the batter into your cake tin. Tap the tin and place in the oven for around 20 mins or until golden and a skewer comes out clear.

    Icing ingredients

    75g dairy free margarine
    75g shortening (vegetable fat)
    1 tbsp vanilla extract
    500g icing sugar
    40-60 ml almond milk

    Using a mixer or electronic hand mixer whip together the margarine, shortening and vanilla until creamy. Add half the icing sugar and 40 ml milk and continue to mix, slowly at first then speeding up until combined. Add the rest of the icing sugar and mix until you have a smooth consistency. If too firm add more milk, if too soft add more icing sugar.

    To decorate spread with cherry jam and the icing and sprinkle with flaked almonds.

  • I think the closes Ive ever seen would be some of the cake mixes, occasionally you can find dairy free mixes where you can adapt the baking instructions to make them vegan (I.e using egg replacer etc), still a bit of a faff though.
    Jammy dodgers, oreos and many other biscuits are vegan though so theres always that.

  • yo redviking co-op donuts (jam and custard) and apple pies are vegan. not a lot of cakes are because milk is cheap

    obvs things like jammy dodgers (not the mini ones though) and oreos are vegan too but in terms of baked goods you're not going to find loads in the supermarkets. always worth a check though. that moment when you double scan an ingredients list and want to high five the shopper next to you is worth it (idgaf if this is sad)

  • I thought that they'd recently revised the Oreos here in the UK and they no longer contain whey? I know they certainly used to but I could have sworn that the last time I looked they were milk-free. Obviously the bone char thing is still an issue though.

  • I made some thick spelt flour pancakes tonight - flour, soy yoghurt, soy milk, dash of lemon, red wine vinegar, smidgen of miso paste, pinch of sugar, seasoning.

    Layered the pancakes with a creamy, garlicky, tomato and sautéed veg filling, topped the whole stack with grated cheese, served hot with crisp green salad.

    Mmmm. I like spelt.

  • According to Wikipedia, the font of all truth, "since Spring 2013, the whey powder has been removed and UK Oreo cookies are now suitable for vegetarians and vegans."

    I prefer a hobnob, myself.

    Yes, I'm sure I've had that answered for me before, but as I've never eaten any Oreos, I probably promptly forgot it again.

    Oreos over here (in Germany) "may contain traces of milk".

    An old chestnut would taste much better than an Oreo cookie. Most revoltingly artificial biscuit-like confection I've ever tasted. As if somebody had mixed equal measures of margarine, cocoa powder, sugar and cat litter.

  • I lost a stone in 22 days drinking only juice. My breath stank, my sweat smelled like cabbage. It was stupid but it did work.

    What is it about the latter you don't like? I've heard nothing beats a smattering of cat litter on toast in the morning.
