Not hard at all. Injera don't have dairy in them (and teff is very nutritious) and they have a wide range of spicy vegetarian dishes, most of which are vegan and the others are usually also available as vegan variants. They do a lot of religious fasting there, so the non-meat cuisine is extensive :)
