I am almost certain this has been asked before, but I can't find it on this thread. Any recommendations for where to get a dynamo wheel set and lights on cycle to work scheme?
Also recommendations for the most reliable set-up for commuting and potentially audax would be amazing! I want something serviceable/repairable

Only really serviceable option I know of is son. Yes, shutter precision claim that too, but mine was annoying after not that many miles. But son is expensive.
If budget is a concern, Shimano works. Not as smooth as son, but you can definitely ride audax with them.
No idea in c2w. -

Is there a cheap and cheerful dyno light I can bung on the Surly that will work for pub rides but also flying down dirt hills with my eyes closed? I don't fancy spending 1/3rd of the bike's price on a klite or Supernova but is anything else cheap any good? I guess ebay might throw some stuff up.

I don’t know if you can still get AXA stuff in the U.K., but used to be seen as good VFM and decent enough. Mostly plastic housings so didn’t feel as premium but then the cost was more wallet friendly.

I see vague gestures towards shimanos being servicable, is this the case? Two of mine feel super rough, handlebars are vibrating around 30kph. Is it wise to mess with the axle nuts?

You can play on the side where there is NOT the connector. It is then just a normal cup & cone setup.

I understand that you want to adjust the play in the axle (quite often the source of being rough), in that case on the non connector side it is just a normal cup and cone adjustment. Opening the dynamo is just messy, there is nothing to do really in there and does not worth it on a Shimano.

Any advice on what to put on the spades to keep them affixed to the contacts on dynamo wheel. Figure it needs to be conductive but sticky...

Adjust the spades by pinching with a plier?
Sounds like son, so it's not easy to get the correct amount of tight. -

Easiest trick is to puncture your front wheel with numb, wet hands. Make sure the hub is covered in grit and road grime. Bonus points if you've got a combination of internal cable routing, poorly trimmed mudguards stays and a rack there too limiting access and further reducing any purchase from your shrivelled fingers.
Absolutely no chance they'll come off.

You mean where the wires clip into the dynamo? Same ones as the Shimano ones.
You could just go into a bike shop and....wait...try Wiggle....fuck. Never mind.
Yeah and I've been flashed by a truck with a gigwatt of lights on it because my light had slipped during the Nat 24hr one year. I'm sure my Six Pack really upset the prick in the cab while I couldn't see anything for 30s with a layer of lycra for protection.
