Got bubinga 15 to fillet some fish we bought at the market in Versailles. From a cafe tabac, got the knife, a coffee, tea and two pastries for less than 15 euro.

15cm Opinels being a normal thing to buy alongside a packet of Gauloise Blondes...Bar Tabacs have saved me on many a ride, shelter from the rain, pastry, coffee and a strong grenadine to keep the spirits up.

I managed to contain myself and bought an INOX No.8, that will be our new cheese board knife back home... I feel a bit bad cuz my mate back home, Matt, is the flagship Opinel retailer in Australia... I should be putting the business his way... Oh well, I've bought loads of knives off him as Christmas and birthday gifts already...

I need a new set of kitchen knives (well, a paring and chef's knife at least, maybe something for meat joints)
Any brands I should keep my eye out for in TJ Maxx?
Budget is at the narrower end, but I would rather get something good than cheap. -

There was always a good range of Sabatier Professional knives in my local TK Maxx, stock would come and go so I'd pop in regularly and pick up things I was missing... I might grab a cleaver if I can this time, an old housemate made off with the one my dad gave me... 😬

I got a mixed set of Sabatier Pro knives (two different sizes of santoku style, one carving and one pairing) from TK Maxx as 'slain says. Very reasonably priced. Still just boggo standard stainless but a going over with my knock off Lanksy kit every so often means they are better than anything I had before.

+1 for a properly sharpened Sabatier, or Victorinox.
I'd focus on something that you feel comfortable with.
