Also, on other Knife news, I found out the other day that the guy who taught me tonsaroen, Y the Japanese Knife Centre, now works full time at the awesome Japan knife shop in Pop Brixton.
I took my three fave knives into him for a total retune the other states and they are looking and cutting beautifully. Highly recommended and the shop is stuffed with steel porn.
I may need to buy a santoku. I don't have one yet. Or a gyotu, come to think of it.
