Everything I've used so far has been seasoned but I'm going to try some green wood soon.
I finish them with coconut oil as a final coating.

I think it's pretty easy. I've seen some videos where people have made custom mora handles on YouTube and it seems pretty straightforward. I'm on my phone but try searching for custom mora handles on YouTube and I'm sure something will show up.
It doesn't help your current situation but I think they also sell blade blanks.

Yeah I saw the blade blanks so searched for videos just after posting that.
Looks fairly simple, drill a couple holes, epoxy the blank in and get shaping.
Now to decide, I have access to some offcuts of the pine used to surface the velodrome so do I use that or go for a more interesting wood?

That is a very beautiful knife but highly impractical. It's "welded with solder" or something instead of using pins or corby screws. The sheath looks just annoying to use. The knife is in too deep. For any serious tasks I'd grab something else. The handle material looks great, but in combination with the tasks in mind (seawater, so sailing etc) it's one of the worst materials to choose for a knife like this. It will always feel cold and might even be slippery. Also, salt water and leather isn't a great combination.
It's a nice letter opener but I'd rather use a good full tang fixed blade with Micarta (or G10) handles and a Kydex sheath or even a stainless Mora if I had to do some serious tasks. -

I want to get a leatherman pocket multi tool with nice knife.
Is a leatherman the brand to get, or is there something better?

Leatherman Wave, mine is 5 years old and gets used very regularly. Also have a Skeletool which is decent if you want something a bit lighter, lives in my daily bag.
Victorinox Swisstool also gets good reviews. Not a fan of Gerber multitools personally.

The Leatherman Surge is bigger than the Wave.

I have had a Leatherman Super Tool in daily use for more than twenty years and it is so worn the blade does not lock, which is handy as it is now legal. I have a Super Tool 200 on my job belt which has always been brilliant. I have a 300 still unused. I've got a big Gerber (more a set of pliers) and a smaller Suspension which is dainty. I reckon you can't go wrong with Leathermans and Surges and Waves are nicest in the hand.

I keep one of these on my keying but I'm a little worried if I do get searched they'll kick up a fuss, even though it's legal carry. It looks mean. Keep it on?
Edit. I've been in London a bit over 10 years and been searched 4 times. I know that's not a lot but you never know when it might happen again.

Thanks. I'll narrow down a leatherman that has the tools I need.
@gridds I want to carry it all the time, so bigger not always better. Portable with the tools I need is best.
I like some of the features of the signal, but not having a small screwdriver is an instant no.
Thanks @Constable_Savage Yes I understand they're locking and so not 'legal' but I don't think that's an issue really.

Leatherman Surge is pretty massive.
First 3 were with a crook knife and Stanley, later 3 were done with a crook knife and Enzo.
Don't see why a leather man/SAK wouldn't work, just make sure it's sharp.
