  • +1 to chinese choppers, blades are actually very soft, but it doesn't matter, there's so much metal there, just keep sharpening away.....

    Some jobs require a dull knife, so I keep a dull 12" cooks knife and a dull chinese chopper alongside my sharp ones.....

  • dylan, those 'steels' work by magnetism if im not mistaken.

    the way it works is by creating a burr of metal by taking the knife away from the steel then re working the burr into the working edge by bringing the knife into the steel.

    i can shave with my kitchen knives sharpening this way.

    the magnet is to help hold the knife in place as far as i know. it on itself wont sharpen a knife

    I used to think honing steels worked purely by burring, and perhaps the magnetism was to hold the metal dust or something.

    But I recently bought a new honing steel and it was completely smooth, I thought it was a factory defect, but I tried it and it worked great. So I concluded it must be the magnetism aligning the sharpened edge.

    Hospitals are full of people who are the victims of knife lovers. Knife lovers are not only chefs. That part, is the shame.

    A love of a dangerous weapon is one thing, but as a tool of work is another. Society reacts with chagrin at the true effect of knives here. THAT is why some, like me, find the knife love, sad.

    Objects that aren't specifically designed to be weapons only become weapons when they are used as such. A chef's knife isn't designed to be a fucking weapon, IT'S A FUCKING TOOL FOR CUTTING FOOD YOU IDIOT.

    We should also ban cars because sometimes people intentionally use them to kill other people.

    We should also ban and hate everything that could be used to kill someone. For example salt, water (hot or cold), pillows, drinking glasses and so on. in fact fuck it BAN EVERYTHING

    ....when i was a chef, I liked the way a chinese chopper gets blunt quickly, makes it really versatile...hacking away at a duck cracass blunts it pretty quick....and a dull blade is what you want for hacking away at a duck carcass....chopping onions next? a few strokes on the steel and the soft blade is sharp again in no time.....no fafffing around with stones and "magnets"

    That magnet thing sounds like tosh to me.....you'd need a magnet bigger than a kitchen to have that effect wouldn't you? but I 'm willing to be swayed if you point me to the relevant wikipedia article.
