I want them as an alloy rimmed alternative to my Reynolds Assaults to take to the Pyrenees.
Not too fussed about weight, but 1800g is too chubby...

I'd drop carbon from the requirements, then there are plenty of options.

For a bit of comparison:

HED Stinger 4's. Schwalbe Ultremo 25c tubs, Dura Ace 11-28 11 speed cassette, skewers.

2,154g in total.

I am very fat.

Buys crabon wheels, doesn't use them when lightweight would be an advantage.

I could probably shave a lot of weight off both of those wheelsets with some decent skewers.

Isn't the Jet 4 pretty much perfect? A bit deeper than you were after I suppose...

I want some deepish crabonz for my CAADs - clinchers. Basically, something that looks rad, is borderline justifiable for the aeros, and won't explode and kill me on an alpine descent.

I know they are desperately uncool, but I like the sound of Mavic's Carbone 40.

I suppose I should also be looking at the Zip 303, Reynolds Assault and HED Jet 4...? A lazy question I suppose, but what else should I be looking at?

Correct. 303s are 'very reasonable' on trade. In the grand scheme of things.

Why not go with the disadvantages of carbon without the advantages of tubular.

My road wheels (older Campagnolo Sciroccos) are getting pretty worn, probably going to get a set of Ventos as I've never had a problem with Campag factory build wheelsets. Might pick a tarty carbon pair up later in the season so want to keep things cheap, anything else I should consider?

I have all the tubulars I'll ever need TBH. Not too worried about braking at 60kg.
