Those cleats'll work, you could also look for SM-SH51 (single-release) cleats. I've only ever used the single-release version, so can't tell you what the relative pros/cons are. I think Snoops looked into it in a bit more detail.
As for shoes, look for MTB ones rather than road, then select according to comfiness on your feet, looks and price. -

You also want something with as much recess in the cleat as possible. Nothing worse than clipping out to foot down and slipping on the cleat when you put weight on your foot.

Sapim Strong are a heavy-weight spoke that hold up to abuse pretty well. Push have them. Also available online at Spa cycles / JEJames / others.

you can get a protection arm for sram hubs which goes around the 'click box' that you get on some model, I imagine this would work on others too as it just slips onto the axel

just upgraded my crankset to a tree spline sprocket with profile 165 arms, with some shadow conspiracy pedals, feels much more solid.
also putting on a new wheel cover on front, pictures to follow :)

Think you will need some kind of shim to run them on ffx forks. I remember looking before and the ffx forks have a 20 something mm diameter leg and the clamp on those is 31.8 mm.
