Passenger footwell is sodden, I lifted the carpet and the padding oozes if I press down on it. I remember seeing some wetness near the sunroof as well, could it be rolling down the inside of the lining?

Can't find any other damp spots

Your heater/aircon matrix is leaking.
It may be a hose, it may be a dash-out job

if its wet and its not been raining/washed then the heater matrix is as BQ suggests the likely culprit

Check the drain holes around the sun roof, they're probably blocked.
