I feel like people would consider an airport pretty lax if it didn't even monitor it's own WiFi for terrorist-looking phrases in plaintext, but active MITM attacks are a little worrying.

Possibly, but would you not expect the security services to be monitoring traffic communicated via unencrypted public WiFi networks in a major airport? Especially when keywords like "blow", "up", "plane" and 'Taliban" are used.
