Ok, possible spec for Penguin #2, need some advice on a few bits and bobs.
Frame: Oak cycles oversize steel
Fork: Enve tapered steerer road disc fork, modified for mudguards (Berk?)
Front wheel: Shutter precision clutched dynamo hub, disc, clincher CX carbon rim
Rear wheel: Hope Pro II Evo hub, clincher CX carbon rim
Shifters: SRAM Red Hydraulic
Front mech: Force braze on
Rear mech: SRAM XO 10 speed medium cage
Cassette: 11-32 (unsure, XT?)
Cables: Unsure
Seatpost: 3T Dorico
Stem: 3T Arx
Bars: 3T Ergonova (Or maybe Rotundo)
Cranks: Rotor Power, 36/46

Why would you want discs for a roadbike? Do you find the braking lacking today with calipers?

Berk might be able to sort something with the forks - there's a guy on here with a Robin Mather (Gridds?) who has knocked some stuff up out of carbon. He may be able to help.
What rims are you thinking - eastern?

My front hubs doing well. Still need to wire it up to the light though. Been busy.
If this is a winter bike, consider Gore sealed cables. Which could also mean considering the sort of cable stops you use.

As it'll be a high mileage Winter bike, I'd assume rim wear would be part of the reason?

Yep, plus the period over Christmas when it was absolutely pissing down all the time.
And, I'd like to use carbon for the rims as I am a total tart- and I'd like to use clinchers for convenience- which means I'd rather not use a rim brake on them.

I'm kind of hoping that if I delay long enough Shimano will bring out Hydraulic braked Di2, which would remove the need for ANY cables.

Although on this build, the fact that Transfil are at least as good as Gore but half the price might be moot
