Just changing the saddle and chainring and getting a slightly longer stem.

My girlfriend has those. The logos come off very easily, a little nail polish remover and you're good.

This is suposed to be the version for mechanical disk brakes, but will it work with v-brakes too? Could I attach it somewhere further up the cable rather than right on top of the brake? Got them cheap off eBay so no biggie if not.

Well, when cable operated discs are used on MTBs, they only use standard V brake levers, so I would assume that the ratio for cable discs and V brakes is the same.
