Actually that brings me to an issue I can foresee with it. At the moment it's got a 50t chainring and there's barely any clearance between it and the chainstay.
I was planning to size up to a 52t chainring for track and criterium racing due to the space in the dropouts and because I have one and the corresponding cogs, but that's almost certainly going to foul the chainstay.
Short of getting the hammer out, what's the answer?

Could I use a centre pull brake caliper on a standard road frame? Or would the reach of the calipers be a bit to much?
Cause I wanna try and squeeze 28s in my beater, for comforts. Plus centre pull brakes are #ameyapproved and I wanna be uncool like him

Changing from side pull to centre pull doesn't affect the reach or, importantly in your case, the tyre clearance under the brake caliper.

to max the tyre clearance with current brake hole position use the 5800 brake I think they have the best clearance due to the curved shape.

I'm speaking to Rychtarski about getting some new forks made for my Donohue, after the old ones broke. Is there anything else I need to consider when specifying what I'm after? This is
what they've sent me when asking what I want" you want MAX fork 1", threadless, straight legs, drilled for brake, no rack or fender. What would be maximal tire size you want to use?"

I've never had to think about rake before. How do I work that out? As for axel to crown length, I guess that's why they've asked for the maximum tyre size I plan on using.

You don't, unless you have some sort of freak frame. 40-43mm works fine on anything between 72° and 75° head angle for 700C road bikes. If your requirements lie outside this, you need to decide first how much trail you want and then calculate the "rake" (fork offset) using trigonometry or one of the available calculating tools, e.g. http://yojimg.net/bike/web_tools/trailcalc.php

If its a road frame id ask for 375mm a-c and 43mm rake. If its a track frame go for 370ish(25c clearance) and 35-40mm rake depending on how fast you want the steering to feel

Measure the rake of your old fork, you won't get it exact but it will give you a rough idea. Also the smaller the amount of rake the tighter the front clearance ;)
