Spotter, just a tiny advice from a sardine lover, it will make all the difference.
When you grill sardines they have to be intact, as in, they can't be gutted.
The salt goes in to the gills, loads of it, and that's it.When/if you remove the guts of sardines, the high heat will make them look
and taste like....well, shite.Just like that:

hey food people!
I'm entertaining my new ladyfriend this friday but we're not sure if we're going out first before we head back to mine.
what's a good dish that I can prepare in advance (pref the night before/first thing in the morning before work) and will only take 30 minutes tops to cook once we get back to mine in the evening?
no allergies or weird food aversions so anything goes.
sadly I don't have a slow cooker yet which would have been a good option.

How about a chili? Mine needs to mature overnight anyway, so you can just re-heat and serve. Plus it isn't too messy.

Chili is not the best for "coming back to mine" kind of date food. Most decent meals can get bashed together in 30 minutes or so.
Steak (prep-cook-rest = 20 minutes) - salad (10 mins) - Oven chips (35 mins)
Bottle of red. Win.

last night's gourmet "what's left in the fridge, and the fridges of my friends, south east london taster menu" dinner:
one tangerine.
a half hour gap and 20 minute ride.
one cold chicken leg and various left over chicken pickings.
a 40 minute gap and half hour ride.
half a dozen small crackers and tapenade.
a handfull of cherries.
a cup of earl grey (no milk).
an hour's gap.
a twix.
an hour's gap and a 40 minute ride.
two slices of bread and peanut butter.
orange squash.really much go shopping and cook properly tonight.

especially as I'm vegan, I know how much effort it takes.
I once had a guy invite me over for valentines day and he had gone so far as to buy a food processor so the he could make a vegan mousse as a dessert. He'd never tried making vegan food before (and to be fair it was only passible), but I was completely touched.

personally, the fact that you are taking the time to make anything should impress the hell out of her. I love it when people do things for me.
Definitely and she strikes me as someone who doesn't expect the world (she's been on more than one date with me after all) but it's nice to pull out the stops once in a while and if I knew for certain we were just going to stay in, I'd definitely be whipping up something from scratch anyways.
but as neither of us can make our minds up what to do and sometimes it's nice to be a little spontaneous and see where the night takes you so I thought if I had something in the fridge that seems like it took some care/attention to put together but could be cooked/warmed up nice and quickly even if we come back a bit late and a bit drunk with minimal fussing about in the kitchen it would make a good compromise.

Nice!!! Have you ever tried making dutty rice? heat a little oil then throw in some cumin seeds, a little pepper, some dried chillies until they toast... Then add onions until they brown and some minced garlic... Pour in your rice and cook to usual absorption method (I do 1 cup rice to 1 2/3 water) - and nom nom nom!
*can also add beans, peppers, celery... or meat if you're that way inclined
