those look far better than my dinner.
I call it Beef and beans.
tasty, but 500g of beef, two tins of toms, and two tins of beans, add some spices. probably not the healthiest of dinners. -

no oxford chucked a last minute exam at me.
so thats friday, and then i fly out sunday.
it meant i missed my visa appointment.but I can sort it out out there I think.
I have to pay for my accom tonight, and I wish I had time to stop in Auckland on the way out but i'm going to be late for the job anyways...
On the way back it depends whether I have gotten into medical school or not.
If not, I'm flying back via my birth place, a friend in honolulu and a friend in SF.Thanks again for everything though.

just watch out for the " eruptions" :)
Waiouru which is the main highway that connects your area to Taupo etc... is constantly closed due to overabundance of snowfall , keep that in mind should you need supplies etc...

Excellent!
My favourite kind of cookery is Keralan, primarily as channelled through RASA N16 (which is of course slightly adapted to Western tastes. There are some very good cookbooks by the owner, Das Sreedharan. 'Fresh flavours of India' (Conran) and 'The new tastes of India' (Headline) are the two you need. 'Fresh flavours' regrettably includes meat recipes (forced by the publisher), and only 'New tastes' is fully vegetarian. And, of course, the guy has since gone on to open lots of meat restaurants even though he is vegetarian, but the original vegetarian recipes are just great. Try Bagar Baingan, Thakkali Curry, or Rasa Vangi. I learned to cook through these books and I think the methods used are vastly superior to a lot of Western cooking.

These are great to make if you have friends over for lunch, quick, easy and cheap to make, also nice served cold at picnic's etc...
Corn Fritters
2 cups self rising flour 1 tsp baking powder 1 tsp optional ground cumin or coriander salt and pepper to season 2 eggs 1/2 cup Sweet Chilli Sauce 1/2 cup water 2 cups Sweet Corn 1/4 cup chopped fresh parsley butter for panfrying
Sift the flour, baking powder, cumin or coriander, salt and pepper into a bowl and make a well in the center.
Mix together the eggs,Chilli Sauce, water, Corn and parsley and stir into the flour gently.
Heat a knob of butter in the frying pan and when hot cook about 2-3 tablespoons of the mixture at a time. Once the bubbles form on the top of the corn cake, flip and cook the other side for a further 2 minutes or until cooked and tender.
Serve with either sliced avocado & sour cream or caramelized onion jam( I have a great family recipe for this if anyone wants it) rocket and chunks of ciabatta
Serves 12 ( just half the recipe if you require less)
Delish!
yes!! these are the best. grew up eating them in none other than my brilliant hometown auckland.
