I brown and then toss in seasoned flour afterwards. A roux approach for thickening works well too. Or brown, get all the veg going. Add flour and fry with veg when its finished softening before you add the liquid (assuming some kind of stew).

Yup. Oven at 135 degrees until internal temp of steak is 125 degrees (about 35 mins for my cuts tonight). Rest under foil for 10 mins then sear on super hot pan for 1 min on each side.

When Heston first got on TV in 2004/5 he did the reverse sear on a rib of beef and the same with a roast chicken and you get stupid juicy meat as the oven never got hot enough to evaporate the meat juices.
He was doing everything at 90-100 c so it took fucking ages -

We tend to reverse sear with oven or smoker at 105 in our household.

Vacuum sealers
Am about to get a couple of new ovens, one is a Neff Fullsteam which can even act as a sous vide chamber. What vacuum sealer should I be considering - it would also be useful for preparing food for the freezer etc.
