I'm open to the possibility but I've never found a recipe where it tastes appetizing. There is a fair amount of Menudo where I'm from - probably derived from your original tripe soup recipe - and I've tried it at loads of places. It's a texture thing for me. Like mushrooms. Can't stand either.

It's that squishy, gelatinous texture that a lot of Westerners can't handle... More prevalent in Asian food, can't think of any other European dishes that have that mouth feel...

Got up early to put the ribs in, garage oven only has one shelf, I'm totally WTF? at mum, she tells me to deal with it, I go off, she agrees to letting me use the brand new electric oven in the unused cooker in the kitchen, it takes me an hour and a half to get it going then it trips the house fuse twice before finally settling down...

Good thing these are veal ribs and won't need a long time in the oven...
