Took lady Apone and firstborn to Hix at Brown's Hotel yesterday. I do love treating ourselves to a genuinely posh nosh up once in a while. Had Oysters followed by Deer Wellington (venison in black pudding and pastry) while the ladywife had beets and goats cheese and roast beef off the trolley. The level of service you get in places like that makes you not mind the eye-watering price for what was essentially a (fucking amazing) pub lunch.
Paul Smith was at the next table which was fun to spy on but him and his impeccably turned out family made me feel self consciously scruffy in my bobbling jumper and un-ironed shirt. Damn him.

i really want to start doing pekin duck at home, but fuck it looks like a faff
separate the skin from the carcass using a bike pump, wash the duck in boiling water/vinegar/lemon juice/maltose and leave to dry for a few days whilst varnishing it with maltose/spice mix.
smoke with cherry wood and then cook it until the skin puffs up and goes crispy and the meat is almost slow steamed inside the skin.
