I don't think you need overnight soaking for a pilau. Taken from an upcoming family Indian recipe book that I am involved with. Matar Pilau (rice with peas). I also have a few other recipes - vegetable biryani might be of interest. If anyone used this recipe, please let me have your feedback!
Serves 6
350g basmati rice, rinsed and soaked for 30 minutes
50g unsalted butter
1 tbsp cumin seeds
1 medium onion, sliced
1 level tsp salt
300g peas, fresh or frozen
800ml boiling waterRinse and drain the rice thoroughly. Set aside.
Melt the butter in a large pan on a low heat.
Add the cumin seeds and fry for 20 seconds.
Add the onions and fry for about 4 or 5 minutes until translucent.
Add the rice and fry on low heat for about 3 or 4 minutes, stirring regularly so that it does not stick to the pan. The rice will change to a light golden colour.
Stir in the salt.
Add the peas. Stir for 2 minutes. The mixture should be quite dry.
Add the boiling water. Do not stir!
Boil on medium heat for 2 minutes
Half cover the pan with a lid and cook on medium low heat for a further 2 minutes.
Cover completely and cook on low heat for another 5 minutes or until the water is absorbed and the rice is soft. Fluff up the rice gently with a fork and serve. -

This stuff is fucking amazing (I put the first comment on that tweet, ha!) - I had it at Earls Beer and Cheese in the UWS (NYC) last year. Its so phenominal. They serve it with cloves of garlic to rub on your toast first. So, so nice.

W1... Ember Yard was exceptional a few weeks ago. Tapas, with a keen eye for the grill.
Everything we had was great apart from some weird squash/creamy thing.
